Fresh Lime Sorbet
(Makes 9 servings)
Ingredients:
3 cups water
1 cup sugar
1 teaspoon finely shredded lime peel
½ cup fresh lime juice
2 tablespoons light rum
Few drops green food coloring
Instructions:
In a medium saucepan combine the water and sugar. Bring to boiling; remove from heat. Cool thoroughly. Cover and chill.
In a 9x9x2-inch baking pan combine the chilled syrup mixture, lime peel, lime juice, and rum. Add food coloring. Cover and freeze about 3 to 4 hours or till almost firm.
Break the frozen mixture into small chunks. Transfer chunks to a large chilled mixing bowl. Beat with an electric mixer on medium speed till fluffy but not melted. Return quickly to chilled pan. Cover and freeze till firm.
To serve, let stand at room temperature for 5 minutes before serving.
