Grilled Veal Chops With Fruit Salsa
(Makes 6 servings)
Ingredients:
6 well-trimmed veal loin or rib chops, cut 1 inch thick (approx. 8 ounces-each)
1 tablespoon olive oil
Salt and freshly ground black pepper
2 tablespoons chopped fresh cilantro or basil
Cilantro sprigs(optional)
Fruit salsa:
1 small ripe papaya, peeled, seeded, cut into ½ inch pieces
1 ripe nectarine, chopped
1 small green onion, thinly sliced
2 tablespoons finely chopped red bell pepper
2 tablespoons chopped fresh cilantro or basil
1 jalapeno pepper, seeded, finely chopped
1 tablespoon olive oil
Instructions:
In medium bowl, combine salsa ingredients; toss to mix. Cover; set aside. Lightly brush veal chops with oil; season with salt and pepper, as desired. Sprinkle chopped cilantro on both sides of chops. Place chops on grid over medium, ash-covered coals. Grill, uncovered, 12 to 14 minutes for medium doneness, turning once. Serve chops with salsa. Garnish with cilantro sprigs, if desired.
